  • 1/2 cup "milk"
  • 15 ounces pumpkin
  • 4 eggs beaten
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon pumpkin spice liquid stevia or vanilla liquid stevia or even cinnamon stevia
  • Optional toppings: Whipped Cream of coconut with stevia


  1. Preheat oven to 350 degrees.
  2. Spray 6 ramekins or custard cups with olive oil cooking spray.
  3. In a large bowl or stand mixer mix together pumpkin, milk, eggs, spices and stevia.
  4. Pour evenly into ramekins.
  5. Bake for 45-50 minutes or until a knife in center comes out clean.
  6. Best served cold.
  7. Invert onto a plate or serve from dish.
  8. Top with whipped cream! Sprinkle with more nutmeg!


SHEET PAN FRITTATAS: Beat a doz eggs and add a dash of salt and pepper plus ypour favorite veggies. I love carmelized onion, turkey, asparagus, spiraled sweet potatoes, and brocolli (sometimes I add charred brussel sprouts and yellow peppers) and a sprinkle of parmsean cheese. Bake for 10-15 min for 375.
